Legendary Lemon Cannabis Pesto Pasta

By: Heather Burton

Spring is in the air and if you listen closely, outside is calling your name. The energy and sustenance this Lemon Pesto dish packs will enable you to tackle the inevitable urge to clean and declutter that happens around this time every year.

This dish is an a total body booster and very simple to make.

Along with cannabis, basil is a power-house super food that can be incorporated into many meals. These plants are also packed full of antioxidants. Basil has many of our essential vitamins and nutrients such as calcium, vitamin C, D, A, B12 & 6 and iron.

The same terpene limonene that is in the peel of lemons can be found in some cannabis strains. It is a plant compound that is known to promote weight loss, boost your immune system, and increase cardiovascular health.

This is a super-food recipe in a super-fast time frame.

πŸƒ Prep time: 30 minutes (10 mins. pesto, 18 mins. pasta)

🍴 Serves: 6 servings (plus additional 6 servings of cannabis pesto)

  • 4 cups basil

  • Β½ cup cannabis infused cooking oil

  • 3 cloves garlic

  • 1 lemon juice and zest

  • ΒΌ teaspoon red pepper flakes

  • Β½ teaspoon black pepper freshly cracked

  • 1 teaspoon kosher salt

  • ΒΎ cup walnuts toasted

  • 3 tablespoons nutritional yeast

  • β…“ cup fresh basil

  • Β½ cup fresh lemon juice (2-3 lemons)

  • 1 tablespoon lemon zest

  • β…” cannabis infused cooking oil

  • 1 teaspoon fresh ground black pepper

  • β…” cup walnut parmesan

  • 1 pound zuc pasta or gluten-free spaghetti

  • Optional: 30 red cherry tomatoes

In your blender or food processor add basil, garlic, lemon juice, zest, red pepper flakes, walnuts, and nutritional yeast.

Break down the basil by pulsing a few times. Then, steadily stream the cannabis cooking oil while continuing to pulse.

Continue until all ingredients are well blended and form a light paste. If you enjoy a thinner pesto, or you would like an added canna-boost to your pasta, add an additional tablespoon or two of cannabis oil.

Enjoy your pesto!

Note: This batch makes enough for six servings-and then some. If you freeze your canna pesto in silicone ice cube trays you will have it on hand for your next craving.

In a pot of salty water (like the ocean), bring the spaghetti to a boil until the pasta is slightly soft. It will be done in about eight minutes. Be sure to stir your  pasta every few minutes.

While the pasta is cooking, whip up the vegan parmesan just like you did with the pesto.

Add 3 tablespoons nutritional yeast and ΒΎ cup walnuts, onion powder, garlic powder, and a pinch of salt into your blender or processor pulse. Simple, dairy-free, and delicious walnut parm in moments.

Now, mix the walnut parmesan, cannabis infused oil, and lemon juice together. Drain and toss the pasta in the lemon mixture.

Add your cannabis infused pesto on top of your pasta, or make some garlic toast and use it as a spread.

Enjoy your spring inspired meal.
