Emerald Jade, otherwise known as Your Highness, is a specialty food stylist and cannabis culinarian for the stars. After trying a cannabis cheesecake at a dispensary in Los Angeles, Emerald was curious if she could replicate the tasty treat. So, she started experimenting. Soon Emerald was able to develop her own 30-minute technique for making cannabutters and oils. But word traveled fast. After sharing her cannabis-infused treats with friends and family, she had multiple requests for her services. In fact, Emerald was able to share her creations at intimate celebrity events. The Original Queen of Cannabis Infused S.O.U.L. (Saving Our Ultimate Life) FOOD Emerald is now the owner of Emerald's Edibles nd its sister company Euphoric Nights Pot Luck Parties. Realizing how extremely important it is for MMJ patients to feel good about eating foods that will help heal them, Emerald Jade has now turned her passion for cooking into preparing cannabis infused meals. She cooks vegan, vegetarian, and soulful meat dishes and oh yeah, the desserts are the Rave!
In the beginning, what inspired you to become a cannabis chef?
It all started when I was in L.A. I knew that is where all the dispensaries and the edibles were. So, I got my medical card. I was really interested in seeing how the edibles tasted. Once I had my card, I bought a few. I ended up getting a cheesecake and some cookies. I tasted the cheesecake and was in love. I remember thinking – OMG this is so good! It then hit me that I could probably try and make it myself. So that is really what kind of inspired me. But I also knew people who were having medical issues. I had a very close friend who had a health scare with cancer. She was in a lot of pain and could not sleep. I started making her edibles. She found that they really helped her. On top of that, I also had other friends who were facing medical issues. So I started baking for them. That is really where it all began. A lot of it was word of mouth in the beginning. People would tell their friends and family about the food. Soon, I started having requests for my services.
What sets you apart as a cannabis culinarian?
I call it gourmet S.O.U.L food. The letters stand for saving our ultimate life. It is not just soul food. I do that as well. Most of my foods are 100% natural. I strive to use all organic ingredients when possible. That is what soul food means for me.
Most requested cannabis dishes?
This is a funny story. I used to bake a peanut butter icing cake. It was a basic yellow cake with peanut butter icing. I have made it in my family for years. People absolutely love it! I started doing these small house parties where I would bake and cook for people. It was not cannabis at first because it was not legal. But I would serve the peanut butter cake. People were absolutely addicted to it! My friends actually started calling it “peanut butter crack cake” because it was so good. That is one of my signature pastries. When I make it with cannabis, I call it my peanut butter crack cake infused with cannabis. This cake is still one of my most requested dishes!
I also make an infused macaroni and cheese with 5 cheeses. I cannot tell you how many people ask for the macaroni, it blows me away! People cannot seem to get enough of it. Another signature dish is my “Weedish Meatballs”. They are like Swedish Meatballs except for they have cannabis. I also do this chocolate-almond milk. I serve it in tiny shot glasses. The beverage is composed of about 35 milligrams of THC. When I do party, those are some of the top creations. Over time, I’ve really developed a wide selection of cannabis cuisines.
Any tips for cooking with cannabis?
Really, it is so easy to cook with cannabis. Once you figure out how to make the butter and the oils, all you have to do is incorporate it into the dish. For example, let’s say you were making a cake and the recipe called for butter. You would just replace the regular butter with canna-butter. That is basically it! Once you have your infusion, it is very easy to create cannabis cuisines.
What do you enjoy most about what you do?
First of all, I enjoy entertaining people. I enjoy seeing people happy. But I also enjoy helping people. If someone has a medical problem, it brings me so much joy when they find relief. It is so overwhelming for me to be able open that door for someone. To show them what they can do to help heal themselves naturally. Because the food is so tasty and it makes them feel better, people love it. That is why I like what I do so much. I have all types of people contact me. It brings me so much joy to see people get together and enjoy food. To hear people share their stories of how they healed themselves with this plant. Or how they are using their passion for cannabis to fight for legalization, I love being in that kind of environment. I’ve always cooked. To be able to bring that joy and love into my work, it’s the best feeling.
Any tips for maintaining a work-life balance?
It is starting to be a lot! In the beginning, I was basically doing everything myself. Now I have a sous-chef and a few staff members who help me with things. It is so much work for one person. It can be overwhelming. For one party, I actually stayed up the whole night cooking. It was a very intricate process. I was making miniature gourmet edibles. They were very tiny like a little piece of candy. I also was doing mini cupcakes for this event as well. It was a lot of very fine, petite work. Now, can you imagine making hundreds of those petite desserts?! Plus, making the crust and frosting. I learned my lesson. That is why I have staff members today.
When it comes to dosage or strain, are there any specific techniques or practices you Apply?
I do a little bit of variation. I use indica for crowds that want to be laid back. When they are looking to relax and lay low. But I really use a lot of sativa in my cuisine. The sativa keeps you up. I find that I’m incorporating more sativa than indica in most of my dishes.
What excites you as a woman in the cannabis world?
I am so excited to see so many people coming on board as women begin controlling their own destiny and helping people. For me that is so exciting. I went to a party when I first started. It was actually a woman who invited me to a cannabis party. I felt so wonderful because I could not believe all of the highly intelligent and incredible women that were there. They were so knowledgeable about cannabis! I felt like a child but it was amazing. They were teaching me so much. Not only that, some of the women had actually heard of me. I was shocked! From lawyers to filmmakers to producers, so many of these people knew my name.
It is amazing today to see how much cannabis has progressed. The people in the cannabis community are so intelligent and passionate. Today, I see more women than ever before leading others. It is so exciting to see this happening! A lot of women are not only involved, they are running businesses. So many women are pursuing entrepreneurship and creating incredible things in cannabis. I am so excited to be apart of it! It is an amazing time.
If you could give an aspiring cannabis entrepreneur one piece of advice, what would it be?
Keep doing what you’re doing. Never stop – do not give up. When you start a business, it is going to start out slow. But keep pursuing your dream. Doors are going to open for you if you stay true to your passion.
