Being a lover of rice and everything crispy, I have started experimenting with different ways of making this tasty treat. Luckily, my kids love eating crispy rice. In fact, it's one of their favorite comfort foods. Still, crispy rice can be a little boring, especially for adults. Hence I experimented. Cannabis Crispy Rice Delights elevates the taste of a classic treat for an older palette by incorporating cannabis-infused oil. Simple and delicious.
🍃 Prep time: 30 to 40 minutes (+ 60 minutes to cool it down in your fridge)
🍴 Serves: produces up to 20 bite size crispy rice.
Ingredients for Crispy Rice:
- 1/4 Cup of nut (peanut or almond depending on your reference)
- 1/2 Cup of brown rice syrup or honey
- 2 Tbs. of cannabis infused coconut oil
- 2 Tbs. of regular coconut oil
- 1 Tbs. of vanilla\
- 3 Cups of crispy rice (cereal – gluten free)
Grease your pan with regular coconut oil.
On a pan over low heat – combine nut, brown rice syrup, cannabis oil and vanilla until everything melts evenly. Stir consistently. Keep the heat low to prevent burning it.
Once melted, pour the mixture into a large bowl and add the cereal. Stir it until everything is coated using a spatula or a big spoon.
With a spoon, form a spoonful of the mixture. Then, make into a circle. Use a baking sheet, place each circle on it. Use parchment paper as lining (tips: parchment paper will prevent the food from sticking to the pan and it makes transportation easier.
