Few dishes are more synonymous with summer than a fresh salad! This fabulously flavorsome, slightly sweet raw cannabis salad is packed with healthy and nourishing goodies, including raw cannabis leaves. The combination of raw cannabis leaves with cannabis olive oil provides your body with a healthy dose of cannabinoid acids (only found in raw cannabis) along with cannabinoids like THC and CBD. Like most salads, you can easily make this a complete meal by doubling the ingredients and adding chicken or grilled seafood.

🍴 Serves: 4
Ingredients for RADIANT RAW cannabis salad
- 2 cups fresh, shredded cannabis leaves. Add more according to taste. Keep in mind that you'll only want to source fresh organic cannabis leaves.
- 6 cups fresh baby spinach leaves
- 600g fresh asparagus, trimmed
- 2 medium portabella mushrooms (Preferably organic)
- 10 small cherry tomatoes (Make sure these are still firm to avoid excess moisture loss during roasting)
- 1 red onion
- 15ml cannabis-infused cooking oil, or to taste
- Salt and ground black pepper to taste
Marinating the veggies:
Cut the asparagus and portabella mushrooms into bite-sized chunks and place in a mixing bowl
Slice the red onion into thick rings
Add the cherry tomatoes
Finely chop the fresh parsley and basil in a separate small bowl
Add the grapeseed oil, balsamic vinegar and crushed garlic, and whisk
Pour the marinade over the cut vegetables and lightly toss the mixture till coated
Cover with plastic wrap and let it sit at room temperature for 30-40 mins
Grilling the veggies:
Preheat the oven to roast
Drain the vegetables, and keep the marinade aside in a saucepan
Evenly spread the vegetables in a greased oven pan, and place in the middle of the oven to minimize the risk of over-heating
Turning the mixture occasionally, roast till the vegetables are tender and slightly charred – approximately 15-20 minutes, depending on your oven
Place the baby spinach, cannabis leaves and roasted vegetables in a salad bowl
Bring the marinade to a boil in the saucepan
Remove from heat and pour the marinade over the salad mixture
Add seasoning to taste
Drizzle with the cannabis-infused oil and toss lightly
✨Serve immediately as a side with slices of fresh ciabatta. Or, as a meal, serve on a bed of amaranth and couscous. Enjoy!
